Frozen yogurt and strawberry cake
Try this summery fruity recipe from the Detox Kitchen - and learn about the health benefits of strawberries

Ingredients
For the base:
150g hazelnuts
100g sunflower seeds
120g dates
2tbsp rapeseed oil
Pinch salt
For the filling:
350g fresh strawberries
100ml honey
200g soya yogurt
2 bananas
Zest and the juice of 1 lemon
Strawberries to garnish
Method:
1. Toast all the nuts and seeds and place them in a blender together with the dates, rapeseed oil and salt, and blitz until everything is combined.
2. Spread the mixture in a 20cm cake tin, with a removable base. Place in the freezer to chill while you make the topping.
3. Place the strawberries, bananas, lemon juice, lemon zest and honey in the blender and blend to a purée. Add in the soya yogurt and blitz until smooth.
4. Tip this over the base and leave to set in the freezer overnight or for at least 4 hours.
5. Remove from the freezer and top with strawberries. Serve immediately.
A note on… the health benefits of strawberries

- They are good for weight loss . The compound nitrate found promotes blood flow and oxygen in our body, which is great for weight loss.
- They promote eye health . Eating three or more servings of fruit like strawberries makes eyes healthier!
